Spicy Sweet & Sour Dressing
Adapted from Ken Haedrich’s Maple Syrup Cookbook
Ingredients
¼ cup of vegetable or olive oil
¼ cup apple cider vinegar
¼ cup of Mount Cabot Maple Syrup
3 tablespoons tamari or soy or coconut amino
1 tablespoon Dijon mustard
1-2 cloves of garlic
¼ teaspoon finely grated orange zest
⅛ teaspoon cayenne
⅛ teaspoon ground cinnamon
⅛ ground cloves
⅛ ground ginger
This dressing goes a long way to brighten up a tossed cucumber salad or umami slaw. Not that your cucumber salad was that far off before, but just, you know.
1. Combine all ingredients in a bowl and whisk until emulsified. Fool with the balance according to your liking by adding more vinegar, spice or sweetness.
2. Transfer to a bottle or container then refrigerate. Shake well before using. That’s it.
