Anne Jackson’s Maple Vinaigrette
Adapted from Ken Haedrich’s Maple Syrup Cookbook
Ingredients
2 tablespoons red wine or cider vinegar
¼ teaspoon of fine sea salt
fresh zest of lemon or lime
1 small clove garlic, minced
Several turns of black pepper
2 tablespoons Mount Cabot Maple Maple Syrup
This legendary sweet and tangy salad dressing was created by Anne Jackson, longtime friend fairy godmother of Mount Cabot Maple. Enjoy it with a fresh green salad, or toss over your favorite roasted vegetables.
Combine all ingredients in a small bowl and whisk until emulsified. Serve over your favorite mixed greens or salad.
