Our limited edition Rye Barrel Aged Maple Syrup is a product collaboration with DC’s queer & women run Republic Restoratives distillery. This product is an infused maple syrup, not a spirit.

We chose to age our organic maple syrup in an american oak cask freshly emptied of their 100 Proof, Single Barrel Straight Purpose Rye whiskey because our two companies exist to do things differently. Republic Restoratives lives their values out loud, and so do we.

With deep roots in The District, this final product is an expression of worlds colliding for the better. This bottle hits smokey sweetness, dark cacao, rich resin, and black pepper, with the kind of long finish that brings home right back to you.

When whiskey is aged in an oak cask, moisture from the spirit wicks out through the wood, keeping the wood hydrated and the barrel tightly sealed. This departed “angel’s share” leaves a little less liquid, but a higher proof alcohol. Since maple syrup is chemically stable and has no water to spare, we found out the fun way that in order not to leak this prescious syrup, this barrel needed to be hydrated twice daily in our basement. We hosed it down, gave it steam baths, and changed its wardrobe of wet towels every day for a year! That’s love.
