Maple Granola

maple granolaIngredients:

  • 3 cups  old-fashioned rolled oats
  • 1 cup unsweetened shredded or flaked coconut
  • 1 cup walnuts, coarsely chopped
  • 1/4 cup toasted wheat germ
  • 2 tablespoons olive oil
  • 1/2 teaspoon coarse salt
  • 3/4 cup maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1 large egg white
  • 1 1/2 cups dried cranberries

Preheat oven to 300 degrees. In a large bowl, combine the rolled oats, coconut, walnuts, wheat germ, olive oil, salt, cinnamon and maple syrup. Stir or toss with your hands until all ingredients are evenly coated. In a small bowl, whisk the egg white until frothy and stir into the granola mixture. Stir into the granola mixture, distributing it throughout.

Spread granola evenly on a parchment lined cookie sheet and bake for 45 to 55 minutes. Halfway through the baking time, gently stir and flip the granola to avoid burning. You’ll know its done baking when the granola is slightly browned and dry to the touch. Cool completely and add in the dried fruit. Enjoy over yougurt, as a breakfast cereal, or by itself!
