Maple Baked Beans


  • 2lbs dry Jacob’s Cattle beans or soldier beans
  • 1 cup Mount Cabot Maple Syrup
  • 1/3 Mount Cabot Dry Maple Sugar
  • 1/2 tablespoon of salt
  • a dash of pepper
  • a good sized hunk of salt pork, diced
  • 2 teaspoons of dry mustard
  • 1 large yellow onion, diced

Rinse and pick over the beans. In a large bowl or pot, cover the beans with water and let soak overnight.

Preheat oven to 400.  In a bean pot or baking dish with a lid, combine the beans with all other ingredients. Bake covered for 8-9 hours, checking occasionally and adding water if beans appear to be drying out.
