Blueberries au Citron


  • 1 lemon
  • 1/4 cup organic maple syrup
  • 12 oz.  blueberries

Using a vegetable peeler, remove 4 peels from lemon, and set aside.  Cut lemon in half and press to obtain 2 Tablespoons juice.  Mix lemon juice and maple syrup in bowl large enough to hold blueberries.

Rinse blueberries in cool water – discard foreign material and damaged berries.  Drain berries and add them to syrup mixture, along with the peels. Refrigerate for at least an hour before serving.
